Judy's Heart Healthy Stuffed Peppers

 This entry is for Mrs. Judy Freshour.  In light of the events of the past decade, all I could think of as my memories were trolled relentlessly, is your delicious stuffed peppers, making cookies and Christmas treats by the old table in my parents kitchen.  Gosh, I must've been five or six.  I even recalled the cat Cocoa being thrown into the pool by David and Jay Kirkland in Beaufort as I ate cooled grits in a blue vinyl highchair.  Mother and Judy were busy making their hair into a bouffant utilizing the old hosed hair dryer in a white case that had a vinyl type cap that turned your head into a white button top mushroom.  I was barely three then.  Before the move to Columbia.  Anyway, after the attacks, and Damon left, (he was my second husband) I was going between Georgia and South Carolina.  Dusting myself off and starting over.  I came up with a healthy version of the stuffed bell peppers.  The Stuffed Cabbage is Mrs. Judy Hooker.  My first husbands Aunt and Godmother.  That's a different thing altogether, but both are delicious, and both of you had a husband in hospice, and the other Judy from the Outlaws MC in Fort Valley had cancer treatments.  Judy Parsons was noted in a baby book for her shower gifts, and I remembered outstanding advice for my daughter before she wed from old stories my colleague had shared with me.  They plundered my home and read through my addresses and private things.  Judy Weeks thought I was beautiful when I was younger, she attends the same church as my parents in Columbia, SC.  Then Judy with the big fat booty was an old classmate of my sister Kelly's.  Judy Spear is Ann Posey's sister in Florida.  Besties with my family.  Bunches of Judy's to hide what happened.  It had to do with benefits for a lawsuit and settlement for water and cancer, on top of an elaborate cyberattack, scams, identity thefts, child trafficking and wrongful interrogation over things I knew nothing about.  This is to remember what happened to me between 2014 to 2023.  Here goes, on April 19, 2020, I devised the following recipe in honor of you.  I couldn't think of much else to tell about you or any other Judy for that matter, or what exactly someone was after,  unless they wanted to know about David visiting while in boot camp once in Columbia, or Amy throwing up with the flu at the Christmas we were all together.  All I knew was Paul was my Dad's Marine Corp buddy and you were dear friends along the way in my parents lives.  Good Christian friends.  Thank you for your visit about nine years ago.  It meant so much to my parents.


Heart Healthy Stuffed Peppers


(4) large bell peppers.  I like to use the sweet colorful variety pack in the organic section.

(1) cup of brown rice cooked tender (I use brown Minute Rice sometimes)

1/4 cup of low fat parmesan or romano cheese, please  enough to sprinkle on top.

(2) cups of diced stewed tomatoes seasoned to taste.  I like low sodium canned.

(1) lb. of browned ground turkey

1 chopped yellow onion


Cut the top from the peppers and remove seeds and stem.  Blend all ingredients and season to taste with low sodium salt and pepper, plus garlic to taste.  Stuff the mixture into the hollowed peppers and top with parmesan or romano cheese.  Bake at about 350 degrees for about 30-45 minutes until the peppers are tender.

P.S.  Judy Blume is a favorite author.  Judy Garland looks just like my former sister in law.  Judy Miller was a favorite coworker.  I'm sure I left out one Judy or the other.  Nonetheless, none of you were forgotten.

P.S.S.  I didn't forget Judy Rodgers Mississippi Mud either.  Delicious!  And Jody and Judy Culpeper and playing in the pool at Peach Valley Club..... Oh well Don Knott's was on Andy Griffith going Judy Judy Judy Judy Judy Judy Judy Judy.  And of course me and Dodi laying in bed and listening to Judy bugs hit against the screen as someone else listened through the phone and internet.
